Ingredients
2,5 pounds smoked boneless pork loin roast
1 tin pineapple rings
Cherries for garnish
Ginger ale (enough to cover roast)
Sauce:
1 cup real maple syrup 3 tablespoons prepared Dijon-style mustard
2,5 tablespoons cider vinegar 2.5 tablespoons soy sauce
2,5 tablespoons pineapple juice salt to taste
ground black pepper to taste
Directions
- Boil the pork slowly in the ginger ale using a large pot (approx 1 hour).
- Allow to stand overnight.
- Preheat the oven to 350 F (160 C).
- Mix the maple syrup, mustard, vinegar, soy sauce, salt, and pepper.
- Place pork roast in a roasting pan. Pour glaze evenly over roast.
- Roast pork for about 1 hour. Remove from the oven, and allow to rest.
- Just before serving, garnish the roast with the pineapple rings (secure them with tooth pricks), and bake / grill in oven for approx 30 min. until warm enough to serve. Add any leftover pineapple bits to the sauce in the pan.
- Before serving, add cherries to the centre of each pineapple ring.
- Carve roast at the table.
